Chocolate Chip Banana Bread, Vegan & Gluten Free

Ingredients

  • 1 cup very ripe Equal Exchange bananas (2-3), mashed

  • 1 tsp baking soda

  • ⅓ cup vegan butter, melted

  • ¾ cup granulated sugar

  • ½ tsp salt

  • 2 Tbsp Bob’s Red Mill Egg Replacer, pre-mixed with 4 Tbsp water

  • 1 tsp pure vanilla extract

  • 1 ½ cups Bob’s Red Mill Gluten Free 1-to-1 Baking Flour

  • 1 cup Equal Exchange Semi-Sweet or Bittersweet Chocolate Chips

Instructions

  1. Preheat the oven to 350°F. Spray a 4x8 loaf pan with cooking spray.

  2. In a small bowl, mix egg replacer with water and let rest for at least 5 minutes.

  3. In a large mixing bowl, mash the ripe bananas until smooth.

  4. Add the baking soda to the mashed bananas.

  5. Stir the melted vegan butter, sugar, salt, egg replacer with water, and pure vanilla extract into the mashed bananas.

  6. Mix in the gluten-free flour.

  7. Stir in chocolate chips.

  8. Pour the batter into the greased loaf pan.

  9. Bake on the center rack for 50-60 minutes or until a toothpick inserted in the center comes out clean. Please watch your banana bread because all ovens are different.

  10. Cool completely before slicing. Enjoy!
